Groundnut Stew

This hearty stew has limitless variations with the main ingredient peanut butter, being the base. Groundnut stew is one of the classic dishes of West Africa. Peanuts, also known in Africa as groundnuts are a legume frequently used in African cooking. For this simple filling stew, peanut butter imparts a yummy full flavor to this dish. For a vegetarian version of groundnut stew omit the chicken and use vegetable stock instead of chicken stock.

Ground Nut Stew
Yeilds 8-10 servings
Ingredients
6 skinless chicken breast cut into bite size peices
4 cups chicken broth
2 cups smooth peanut butter
1 can tomato paste
6 fresh okras sliced into medium peices
1 large tomato diced
2 tablespoons vegetable oil
1 medium onion chopped
2 hot chile peppers cut in half
1 teaspoon red pepper flake

Directions
1. Heat oil in a large saucepan over medium heat
2. Saute chicken and onions for 10 minutes
3. Add remaining ingredients, simmer for 25 minutes. Serve over brown or white rice.
