Making Sweet Potato Fufu

Fufu is a classic West African food particularly made to go with soups and stews. They are typically made from flour pastes in water but can also be made from cooked and mashed root vegetables such as sweet potatoes.

Ingredients:
2 large peeled sweet potatoes
Salt to taste

Directions:
Place sweet potatoes in a large pot and fill with just enough water to cover sweet potatoes. Boil on high heat until soft, about 30 minutes. Drain, run under cold water and allow to continue cooling for 2 hours or until they can be safely handled. Place in a large bowl add salt use mixer to blend and activate glutton until mix resembles a thick paste, add water if needed. Form into teaspoon size balls and serve with any soup or stew.
